Fresh noodles aren’t hard to make and are so much more delicious than the instant variety. You can save money by making them at home, too. All you need are these three ingredients and a little time.

First, you’ll need bicarbonate of soda, water and all-purpose flour. Bake the soda by spreading it on a foil-lined sheet pan and baking at 120°C for about an hour. This transforms it into the ingredient that gives noodles their colour and springiness: alkaline salt.
Dissolve four tablespoons of the baked soda in a half cup of warm water, then add a half cup of cold water. Mix in the flour and knead it until you have a soft, springy noodle dough. You’ll need to refrigerate the dough for an hour so it can proof and once it’s is done, roll it out.
