If you have a favourite soft cheese you just can’t get enough of, you can use this simple template to turn it into dressing or dipping sauce. No special ingredients required.

It doesn’t take much to transform soft cheeses like feta, gorgonzola, goat cheese or blue cheese into an all-purpose liquid. Kelli Foster at The Kitchn suggests you take 113g of your favourite soft cheese and add it to about two tablespoons of water or milk, a little salt and pepper, and then add any optional ingredients like fresh herbs or spices. Throw it all in a blender along with a tablespoon of olive oil and blend it until it’s smooth.
With this template, you can mix together anything from tangy salad dressing to the perfect dipping sauce for hot wings.
