Spring means asparagus is in season, but before you grab a bunch to roast, sautee, shave into salads or stir-fry, our friends at Chow remind us that storing your asparagus upright in a couple of centimetres of water will keep them fresh in the fridge longer than leaving them in the crisper.
The video above tells the tale. Make sure to avoid split, cracked or already dried-out or woody ends. Once you get your asparagus home, cut about a half-inch off of the bottom and store the stalks upright in two centimetres water at the bottom of the glass. Cover with a plastic bag. If the water gets cloudy, change it, and your asparagus will stay fresh for up to a week.
It’s an old trick but a good one — one that also applies to fresh herbs and celery too, if you want to try it.
