Most cabbage recipes call for you to remove the core and toss it (or compost it), but this is folly. According to Epicurious, a cabbage core “is a crunchy, radish-like vegetable part worth eating all on its own,” and they have several tasty plans for it.

Not only can you eat it raw — just slice it up and serve it with some dip — but you can pickle it, puree it into a soup, or batter it and fry it tempura-style. Also, there’s no reason you can’t just slice it into match sticks and use it to add dimension to some slaw. You can never have too much crunch in a slaw.
