We tend to think of dips as white, creamy liquids with flecks of herbs or other greenery hanging out in there, but Serious Eats has a recipe for one that is unlike anything I’ve ever dipped a carrot in, and it contains pork, miso and walnuts.

A meat-based dip may seem a little strange at first blush but, when paired with miso and and toasted walnuts, you get something truly delicious and substantial to dip your veggies in. Beyond those three ingredients, you’ll also need mirin (rice wine), sugar, dashi and diced onion. The onion is cooked until translucent, at which point to pork is added and browned. Next, toasted, ground walnuts are stirred in, followed by a mixture of miso, dashi, mirin and sugar. All of this is reduced until you have a thick paste, which is then ready to be served with raw vegetables, lettuce cups or some sort of chip or flatbread.
