Who doesn’t love guacamole? If, like us, you take a certain level of pride in being an avocado whisperer, here’s a trick that’s going to take your guacamole game to the next level.
Dana Cowin, editor-in-chief of Food & Wine magazine and author of the book Mastering My Mistakes in the Kitchen, shared a “why didn’t I think of that?” moment on Instagram when she was watching New York chef Alex Stupak prepare guacamole for a crowd. Here’s what Stupak does: He scoops out the flesh of half a dozen avocados, places them on a cooling rack with 1/4-inch square mesh, and then places the rack over a half-size hotel pan already filled with other ingredients needed for guacamole (like coriander and onions). Press the avocado through the wire mesh, mix together, and in mere seconds, you’ve got a large batch of guacamole with a consistent texture that’s not too smooth but not too chunky.
This trick probably isn’t too useful if you’re just making guacamole for yourself (unless you really love guacamole and you’re very hungry, in which case, we don’t judge), but it’s a pretty brilliant shortcut for making a large batch of guac. The same tip could easily be applied to making salads, tacos, or anything else that calls for a large amount of chopped avocado.

You’d want to be making large amounts given how long it can take to make sure those wire racks are properly cleaned
