French toast is a great way to use up stale bread, but a tried and true recipe from Cook’s Illustrated suggests baking your bread slices in the oven on a wire rack for eight minutes each side at 150°C. This prevents excess moisture in the bread while keeping the flavour. If you like planning ahead, you can even place some pieces on a wire rack and just let the pieces sit overnight.
